I backup my data using the export feature
I use html format in daily incremental and weekly full exports

We don't usually create meeting notes using the Evernote editor
I use Notability on an iPad with an Apple Pencil
The notes are stored in Evernote in pdf format - easy to encrypt
MS Word might be more common, stored in Evernote in .doc format - also easy to encrypt

- no limit on note selection
- export format option for html and enex

If you want to continue viewing the notes in Evernote, you have to make changes
My process was to move attachments to external files replaced with file links
I keep the notes in Evernote, moved to an online notebook
Personally, I use scripting to generate the date in my preferred format
In fact - the entire note title is generated by script
My scripting tools are Applescript and Keyboard Maestro
Same for me - At the top of my list is adding Applescript integration to the Mac app
There's also less critical features that I use (example Top List view)
I won't be switching to the Version 10 product until such work is completed
You're right, someday we will be forced to switch
But that day is not today, not tomorrow, not this week, ....
When the time comes, I'm hoping Version 10 will be completed and suitable for general use
That will make it an easy switch
