2. Is there a mechanism to support the transfer
Other export options are .html and .enex
My "transferring Evernote data to other apps" experience used the .enex format, with separate export for each notebook

I use a spreadsheet note to track my progress

Cells are colour coded; green for normal, red for bad, yellow for exceptional, ...
Brief notes can be inserted, or a link to a note
imho I don't want a separate application for organization and task lists

I moved to Devonthink from Evernote Legacy, but there are features I miss
