I find Evernote's editor fine for basic notes For serious work, I use a dedicated editor app. Word/Pages for word processing, Excel/Numbers for spreadsheets, ... I add the documents as attachments to the note. Evernote works well with office/iwork documents

Even if I don't need it, I add a table just to get the colour background; it can be one row, one cell I actually like using multiple columns. It's better use of the note space

Just a warning. Evernote will rebuild the database drop from the master version on the servers, however the rebuild doesn't include Local Notebooks or unsync'd notes

Personally, I use Evernote to manage my tasks, with every task being a separate note My process is date-driven; I store the due date using the Reminder feature
