OK... I found where I think you are seeing this. The 'Simplify formatting' option is the same as the magic wand which is usually labelled 'Simplify and Make Editable'. This is when you want to edit the content of an HTML/Web Clip container. 'Remove' is nothing to do with formatting. Select that and the whole HTML container is deleted from the note. The same as highlighting the container and pressing delete. 2 Link to comment

I just tested on some text that was boldfaced, in red font color, and with green highlight. "Simplify" only took away the red; "Remove" got rid of all formatting (as it should). What exactly "Simplify" does in any given case, though, can probably only be discovered by trial and error. I don't know that there is a description anywhere. 1 Link to comment
