Keep local backup?

You can keep a backup of your Evernote data on this device after you sign out.

  • What would be the result of the "Remove my Evernote data from this device" option? If I did this option and relogged on would my data be downloaded from Evernote/cloud server?
  • What does the "Keep a backup" option do?

Removing the data at sign out is the first level of fixing data corruption errors. You can also use it if you do not wish to keep any data stored on your computer. When you sign back in the data is recreated. Keep a backup does what it says. Your data is retained at Sign out. Neither are really reinstall options. Once you decide to reinstall due to errors you are probably best to ensure that the program and data directories are deleted prior to the reinstall.

Is it really a backup, a static copy? Isn't it just local storage for syncing with Evernote and ever changing? Or does a reinstall setup new data directories? But that doesn't seem to follow, don't you need to delete the existing data to get a clean install? Where is the backup?

Yes, this local copy is "ever changing".  Evernote will keep it up to date with the master data version stored in the cloud 
This local copy is only used for offline access    
  
A separate cache is used for syncing

A master file to use as a backup source needs to be up to date. The local file in itself is not a backup - it is synced to the server, and sync is fundamentally different from a backup.

Use any backup software to create a copy of that EN folder and store it to another disk or to a cloud storage.
