It would be great if  you could have a master note for something and then be able to archive/hide sections once they are completed - with the option of exporting the entire list for a full report

Well, you can do this in the other direction. It is a Table of Contents note.

Create your subsections as individual notes, then select them all and create a Table of Contents note. I then put checkboxes next to each one. Then as I work through them, I check them off.

Not exactly what you are asking for, but it is workable.

This is not an option with the Evernote format/editor
I've used file attachments in notes that support similar features
- for example MS Word and collapse/expand outlines works well in an Evernote note

Currently I use a "Completed" note for items moved from my master note, and a Done tag for multi-item projects.

You can filter them out of searches if you like, works for me.

Moving done notes to a local notebook on a secondary computer would work well with EdH's suggestion.

A free secondary account would give you separation if you don't have a second computer.  A Premium main account gives you more flexibility with sharing accounts, but it works ok without it.
