Other characters are automatically converted to a bullet point as well (eg +). You could use a text expander (e.g. AutoHotKey) to convert a text sequence (e.g. two hyphens) into a unicode character that looks like a hyphen but is not actually converted to a bullet point. (e.g. U+2010). Alternatively you could just use 2 hyphens.

Thank you all for your kind and quick answer.
Between us, it seems really bizarre to me that Evernote hasn't added an option to change the behavior of their piece of software. I don't think it was too complicated...
