It should be possible to encrypt documents prepared in other apps like Word or Excel, and any text can be saved to PDF and also encrypted. If you truly don't want there to be any risk at all of these documents being corrupted or hacked, you'd probably be better off saving them to an encrypted external hard drive that is not normally connected to the web.
