Now I need to download all my notes on my mac, in pdf or text file, so that it can read them without evernote.

Evernote Legacy offers two export options; .enex or .html
I use html format for my backups
- notes are in html format; readable by any browser app
- attachments are in native format; pdf, jpg, doc ....

Print to PDF?

yes, but in this way I have to do one note at a time...8 years of notes it's impossible in this way... I have to do in one time all of them.

When I try to export (only 50 notes at time it is possibile) it is available only .enex.
How can I export in .html?

Well you are on a Mac so I don't know the options.  On Windows 6.25.1 you can batch select a bunch of notes and print them to one file.  There is an option dialogue as to how you want it done.  Does the Mac legacy have a similar capability?  If you want PDFs of your notes.

You can export even on v10 notebook by notebook, to ENEX. This file type other apps can import. Because the notebook information is lost on export, it should anyhow be done per notebook.

There is a way to export into Apple Notes as well. And DEVONthink imports (if I understand it correctly) the EN content directly, trough an API.
