My method is to convert to a pdf for encryption
Note - the encryption is not an Evernote function; I use an external process

Answered my own question: However you cannot encrypt an image, like of a credit card.

You can also drag into Word or Excel and encrypt that file.  Or store the image in a folder and add a link to a note in EN.  Also, you can enter the salient bits into a note and then encrypt that text.
