    That is not correct.   
    V10 only supports export of selected notes, or all notes in the notebook

    I used the Evernote Legacy product on a Mac which stored a local copy of the database
    The metadata was stored in a small sql database, with the table structure you described       
    (a notes table, a tags table, a note/tag table)    
    The tags table contained tag-id, tag-name, tag-parent   
    The note/tag table contained note-id and tag-id
    The note contents were stored separately from the database; a separate folder for each note holding a .enml file

    As per @CAlS, using the Legacy product export in html format    
    attachments are linked to the notes

    I actually used export in enex format because I was moving to another service that supported that format on import    
    I continue to use html format for my notes

  4. My use was single user, so I can't comment on the collaboration features

    For organization, Evernote uses tag methodology   
    This worked well for me, but upset some users who wanted folder structure

    A concern is that Evernote's unit of storage is a note   
    We can't simply store a pdf file.  It has to be a note, with the pdf stored as a note attachment file   
    I think a Document Management System's unit of storage should be the document file

    I use tags to control and  follow-up     
    For example, a to-be-paid tag    
    I stored due-date using the reminder feature

    Evernote stopped using their own data centers and use the Google Cloud Platform

    Option of individual image files or multi-page pdfs

    Other scanner apps provide the same option

  7. I'm interested in hearing your criteria

    Evernote uses notebooks to identify notes as offline, shared, or local (legacy)   
    I also have a few apps that insist on using their own notebook   

    Other than those notebooks (minimal), I rely on tag methodology   
    My preference for tags is that multiple tags can be assigned to a note; with notebooks we're restricted to a single assignment

    My daily planner is simply a note, created each morning from a template    
    For me, it's a combination planner/journal/dashboard   

    It can be as fancy as you want   
    I think the important planner point is a section with hour headings where I time-block my day    
    I insert entries after reviewing my calendars and task list   

    Title yyyy-mm-dd Daily Journal
    No special filing; just tagged !Journal-NoteDaily   
    I have a shortcut to list my journal notes

    On the journal side, I insert a photo from my current location,    
    screenshots from various sources; weather, tides, calendars, task list

    Thanks for the template; I also use a project master page   
    In my use, the task items are links to task notes

    Your task sections are Main Tasks, Sub-Task and Follow-Up     
    I use task sections Active, Next Action, Pending, Completed

    Pending is my working pool while a project is being planned
    At the end of the project, all tasks will end up in Completed
