It is theoretically possible to use tags/nested tags as pretend folders.

It's also theoretically possible to use  Evernote Stacks/Notebooks as "pretend folders"; only the two levels tho

    >never, ever, get to review your information database in a hierarchical pattern

I use the sidebar notebook/tag trees for a hierarchical view

where I have to remember back which tag I used for specific subject.

You have no problem with remembering the folder/sub-folder used for a specific subject
Why is there a problem remembering a tag/sub-tag?

I'm wondering how future proof apps like Evernote are/can be

My experience is 12+ Years  with the Evernote Legacy product
Evernote is still here; I'm  not concerned with losing access to my data

Hopefully, we've assured you that we can export our data whenever required
i've used this for backup; again I'm not concerned with losing access to my data

As to transfer to other apps; I see two issues
    1. Does the app even support the features; for example tags
    2. Is there a mechanism to support the transfer

I know that it is possible to export notes as PDFs

Other export options are .html and .enex
My "transferring Evernote data to other apps" experience used the .enex format, with separate export for each notebook

    >what happens to the data (notes, attachments, links etc.)

    Notes and attachments are preserved
My experience with inter-note links is they're not adjusted; they point back to Evernote
I used a script (applescript) to convert the links to the new platform

You can backup the data directory for the new application using an OS backup process.

Evernote is a cloud service; with data stored at the Evernote servers
Before backing up the local data directory, confirm there's a local data copy (a setting in Preferences)

    >So, even with Legacy, the best advice was to export one notebook at a time.

Agreed; I had this scripted in the Legacy product

EN is taking up 80gb on my mac.

Evernote is a cloud service; your data is stored in the cloud
Local storage is an option specified in Evernote preferences (save data at logout)
Disable this option and the local data copy will be removed

    >I have uninstalled the EN for Mac app, but all the locally saved files are still on my hard drive

    Just delete the folders/files
There is no syncing when using the web version

table of what was lost between v. 6 and v. 10, including what's come back and what hasn't.

I'm a Mac user, and the corresponding feature to Enscript is Applescript; also still missing in v10
This is a required feature for me; my show stopper

The first v10 release included the note
But please be aware that there are a handful of features—such as AppleScript, import folders, and the ability to edit note creation dates—that are not yet available.
    Count me as skeptic

merge or cut and paste the files together ... Each month sort alphabetically and merge into a file say 202205.

I'm content with notes, title prefixed with the date/time, tagged as required
I see no need for merging notes
I only use notebooks for sharing

I use a spreadsheet note to track my progress
Specific items in the first column, columns for each day
2 pages long; n years wide
Cells are colour coded; green for normal, red for bad, yellow for exceptional, ...
Brief notes can be inserted, or a link to a note

Organization  and task lists - Trello

imho I don't want a separate application for organization and task lists
I use a single datastore for all my notes; including task notes and lists
(for example, you mentioned Notion; I use Devonthink)

Yup. All good. No contraventions noted.

    1. Do not post messages that are obscene, vulgar, sexually-oriented, hateful, threatening, or otherwise in violation of any laws. In addition, trolling, threats, personal insults, and name calling are not allowed.
  11. I moved to Devonthink from Evernote Legacy, but there are features I miss
For example; I still use html-based notes, but haven't found a wysiwyg editor that matches the Evernote feature-set
also I no longer have inline views (transclusion) of attachment files

For creating an easy, fast backup simply copy the Evernote folder containing the full database, or let a backup software do it for you.

Data backup is a different discussion
Evernote is a cloud service, with data maintained on a cloud server
Before a "simply copy the Evernote folder" make sure there's a local data copy (setting in Evernote Preferences)
Also when restoring the database from a backup copy be aware the first online sync will undo the restore
