Using Evernote on a portrait oriented screen.

I recently rotated my 2nd monitor 90 degrees and to my surprise,
found that doing so improved my Evernote experience.
I could see more relevant information with less vertical scrolling!

The screens are both HP Elite Displays, ones an older E233 model, the other an E243.
Both were purchased use, so were inexpensive.

Interesting. I've got a fair-sized Dell 2-in-1 laptop, and I haven't thought of using Evernote in tablet mode. Tried it, and I do get a lot more reading room with longer notes, though the display is nothing like your gigantor HP monitors. Something to keep in mind!
