Please, I need a folder, subfolder-tree style for better organizing my notes inside notebooks.

Hi.  Not possible in Evernote,  unless you can use tags.  Set up a nested tag layout such as

• home
  • recipes
    • hot_lunches (searches hate spaces)
      • vegetarian

...to remind you of the keywords,  then apply those four tags separately <home><recipes><hot_lunches><vegetarian>

You can search for all vegetarian meals / all hot lunches / all recipes - or that specific group of vegetarian hot meals.  Use tag:<keyword> tag:<keyword> for detail searches.

Have you looked at the notebook/tag trees 
(screenshot is from my Mac)

The Notebook tree provides for two levels
The Tag tree provides for unlimited levels
