As @CalS posted, the Notebook limit is 250 for Basic accounts, 1000 for Plus/Premium accounts.  Evernote-system-limits

fwiw   There are two organization fields available for notes; Notebooks and Tags
           The Tag limit is 100,000; I have close to 400 tags
