Looks like revert to legacy is no longer an option. So remaining options are "Just accept it as it is" or "switch to another note app"

I'm talking about things like bullets where it changes a "-" or "*" into a bullet. It the "old" version turning off auto-formatting was allowed on all platforms. (See this KB article) Now auto-formatting can not be turned off any any platform -
Please allow us to turn off auto formatting. Common items I type keep changing and I have to press Command-Z each time to get back to original characters. Other forum members, please Vote this Up!.
