If I do that, I'd like to Not create a reminder, just to title the note with the date. Is this possible? can I put a - before the date or something so EN doesn't recognize it as a reminder?

You have to specifically flag a date; there is email syntax documented here https://blog.evernote.com/blog/2010/03/16/emailing-into-evernote-just-got-better/
