Minimalist note

Evernote has two ways to quickly bring up a blank note.  Ctrl-Cmd-N brings up a dinky blank note space that is attached to the menu bar.  Ctrl-Opt-Cmd-N brings up a normal blank note – but with the UI lurking behind it.  9 times out of 10 I just want to write a note – I don't need the UI.  So if I use the latter method, I have to close the UI.  I would like to see a way to make this configurable.  If you don't want the UI, then click a box that says "Don't launch the UI".

I agree - sometimes the UI gets in the way and it would be good to have an option on the Mac.
On the iPad there are various add-on apps to do this.  I use FastEver
I also use Siri and a reminder list so I can do this by voice.

I thought Alternote on the Mac would be the way to go but it didn't really have 100% interoperability with Evernote.
