Hi.  Undo seems to have a variable effect depending on how and where,  and in what OS you're applying it.  If the erratic behaviour is constant and serious,  you might try uninstalling and reinstalling the app.  You can report the issue on https://www.evernote.com/SupportLogin.action if you're a paying customer,  Twitter - https://twitter.com/evernotehelps if not.
