  1. I've experienced similar issues on an iPhone 5S. The app just freezes when syncing. Following the instructions on this thread (https://discussion.evernote.com/topic/79714-cant-use-evernote-on-my-iphone-possibly-since-update/) I've disabled the "Recent notes in today" setting and it seems to be working again, so this may be a work around for you while waiting for an updated fix from Evernote.
  2. If you use a .webloc file, the note will get opened in the Evernote desktop application right away, but if you use the .url file Safari will open and then handle the URL to the Evernote application. In either case, the note gets finally opened in the desktop application, not in the Evernote web application. The important thing here is the evernote:// URL handler.
  3. It's not terribly convenient and you need to be able to edit XML files, but doable anyway. You can create your own .url or .webloc file with a plain text editor, check http://stackoverflow.com/questions/146575/crafting-webloc-file for instructions. I checked creating both types of files with a evernote:// link and it works, but the .url file is always opened by Safari, not my default browser (Firefox). I find it easier to put a bookmark in my default web browser and use a launcher like Quicksilver or Launchbar, though.
