How do I delete text on the iPad?

What happens if you type a character or use  At the top right of your keyboard

I have the latest updates of iOS and Evernote. I am not using a separate keyboard.

I open a note, select part of the text by touching the screen. But there is no keyboard shown so I cannot try what you suggest

I'd suggest you should bring up the keyboard if you want to do any editing on the note.
Just touch on any part of the note, without holding down too long

Thank you. That was the solution. It seems that you must 

1. touch the text of the note - brings up keyboard
2. touch the part to be deleted. Menu including "select" appears. Touch "select". word is selected.
3. Press on the selected part
4. Menu including a "cut" appears
5. select "cut".
