come posso fissare rendendo standard per tutte le note

 il formato carattere e il tipo carattere ?

in modo che possa iniziare a scrivere subito con quel formato.

Hi.  It's not currently possible to set a standard text style for all notes.  You could create a template note with your standard layout,  and copy that.

Use templates
