Improved sketch

I really enjoy Evernote, but one thing that has always bugged me is the clunky sketch option. I appreciate it has the search handwriting feature, but I find the saved sketch looks ugly and too pixelated (outdates technology). Is there any chance it could be more aesthetic and more of a joy to write. I find myself writing in GoodNotes instead which has the search feature as well, but would rather use all of Evernote's features properly.

I think you are using Evernote's very basic drawing features as well as can be expected - I use several 'add-in' services to extend Evernote's functionality,  and if GoodNotes features provide somethuing you need,  I'd say you could and should use them.
