Screen capture saves automatically - no ability to add text (or add another screen capture) while note is active in the helper

I typically use the "helper" feature while doing research. I used to do this by clicking  the elephant icon in the upper right corner, using the screen capture feature to save an image, add links, text, and notes. I like to keep multiple related screen captures within a single note. This now is impossible since the upgrade to Big Sur (using version 10.5.7 of Evernote). Once I grab an image it auto saves and I have to open Evernote and locate the note to provide text. I also am unable to keep a note open while working on it in order to add a second screen capture. Am I missing something? I have been playing with the new version for a week and I am not getting better results.
