Use Evernote locally (or disable synchronizations)?

Hello everyone , I'm new here so please don't be too harsh if my question seems stupid or already answered (I checked before).

So to put you in the context I was a  MacOS user then I switched to Windows. One of the main app that I used the most on MacOS is their note app which is awesome btw. So I googled a lit bit and found what could be the best alternative for Windows --> Evernote (cool app). But my main issue is that I don't want to keep my data on the cloud (call me old school). So here is my question:

Is there a way to use Evernote without the synchronization? Just as a regular note app and have the data saved on the computer not the cloud.

I've tried some tweaks but it didn't go well. This morning when opening Evernote, it tried to sync the contents. But I canceled the operation, result I lost all my data. I looked up on google and the only thing I found was to use previous versions. So if someone has a way to help, I'm listening.

I was going to answer Local Notebooks, however Evernote has dropped support for them

The notes could be stored on your computer in an external folder
In Evernote, you would have a note and the contents would include a file link to the file stored externally

For example, I used an editor (Apple Pages) to create a sample note on my Mac (sample.pages)
It's stored in an offline folder (/Users/DTLow/Desktop/)
