Is there anyway to tag notes created on an Apple Watch with a default, say: AppleWatch?

Bumping is not polite - this is a user forum, so you are requesting an answer from other users, that may or may not want to answer.

To answer your question: No.

At least I have not found any toggle to mark watch notes by a tag. In the Note information there are no hints that a note was created using a Watch. Anyhow, it only comes to life after being processed to and synced from the iPhone that is connected to the Watch. So to move it, you have to open the EN app on the iPhone, wait the Watch to sync there, and then sync it from the iPhone to the EN server. You could open the new note on the iPhone and tag it with a "Watch"-tag, if you want.

IMHO there is not much autonomy in the watch app.
