Open With Default

When a note is right clicked, Open With shows a list of editing apps and "Preview" is tagged as (default). Is there a way to change the default to another app? Like PDFpen?

I think that menu is controlled by macOS. Find a pdf on your mac. Right click on the file and select Get Info. Look down and find Open with and select the app you want to use as the default. Then click Change All.

You're dipping into Mac OS stuff

In Finder, right click on a .pdf file
> Open With > Other

 

or as per @Jim.G under Get Info

This only applies to that one file opening situation. To change the default you have to do it the way I described.
