Is there a way to change the default to another app? Like PDFpen? I think that menu is controlled by macOS. Find a pdf on your mac. Right click on the file and select Get Info. Look down and find Open with and select the app you want to use as the default. Then click Change All. Link to comment

You're dipping into Mac OS stuff In Finder, right click on a .pdf file > Open With > Other or as per @Jim.G under Get Info Link to comment
