What is the easiest way to convert this to a list of emails. Aside from that, what's the easiest way to convert the PDF to plain text and I'll write a program to pull the emails out. Link to comment

If you use a Mac and your scanner used OCR while creating the PDFs, try this guide from fellow forum user GrumpyMonkey:http://www.christopher-mayo.com/?p=551This will extract text from PDFs, you could then write your program to extract the emails. You can extract the contents of OCRd PDFs into text that you can then extract the emails from (manually or with a program you write, since it sounds like you have those skills!). Link to comment
