preserve quotation marks ", -- and similar

Hi, I use evernote to keep track of bash commands for my Mac and Linux. They contain lots of -- and " and ' which need to be preserved exactly as I write them, cannot be transormed in nicer quotes or nicer dashes. 

Even if I make the note plain text Evernote keeps changing -- into — and " into ”  which I hate so much. 

Is there a way to switch off completely this beautify of the text?

You might check your Mac Preferences
