I just want to say to the Evernote staff: This is still a problem important to people that should be solved. I experience it on Evernote for Mac. Solving it is likely a low labor time task. Make "tab" key do a normal indent of first line of paragraph. If you want, you could make tab+[other key] indent all lines of the paragraph.
