I'm not even sure you could install Evernote three times (haven't tried) but each instance of an account needs its own unique email address. If it's feasible to use the web version you might be able to use the online version, but you'd still need the email addresses to open accounts. It would be possible to have one account with three stacks of notebooks, one for each of your users, but the content of all users would be available to whoever was logged in, as would everyone's tags.
