They are stored unencrypted on your computer and on Evernote's servers. You can select text strings and encrypt them one at a time (zero-knowledge -- only you know the password). You can encrypt attachments and upload them one at a time (also zero-knowledge). However, you cannot encrypt the contents of your entire account (or individual notebooks) all at once. This feature has been requested. One solution for extra security is a "local notebook" that never syncs with Evernote's servers. Link to comment
