If you're shooting with the camera and sending that picture to Evernote, you'd have to crop with an external app. If you use the Evernote camera and choose 'page camera' then it should automatically crop to the edge of any document when you take a shot. I'm on the beta version, so not sure how much of all this has made it to public release yet, but if you can't do it yet, these features are coming to a release near you shortly... Link to comment
