I use opera to access the mobile site and can read all my notes just fine but some of the notes cannot be edited while others can. Any thoughts on what could be causing the inconstancy? I even had one note the was editable for a day then became read only the next day.

In order to prevent you from losing important content or formatting, we prevent mobile editing whenever the note contains styles or images that cannot be preserved in the text-only mobile editor.

This means that if you edit the note somewhere else to add an image, or add boldface (etc.), it will not be editable on the mobile.
