Shortcut that keeps vanishing...

After posting this I went and deleted it on my mobile apps, and added the shortcut back in on the Web app.  It seems to be working now... so that is good, but the initial problem was odd...

I have a shortcut to a note that keeps disappearing.  Does anyone know why this might happen?

This happens on the Windows app, as well as the Web.  Right now it is still visible on the Android and iOS apps.

The note is one I have used since 2021 to list the week's meals and has been a shortcut all this time, until now.
