Encryption Not Working for Windows & Security Q's

Questions! 

1/ Can you use the desktop only and not have the information online?

2/ I've watched the instructions many times for encrypting text in notes and it is not working

3/ Does anyone use this platform for notes for a health care practitioner?

Hi.  

1. That's like buying a car to listen to the radio.  Evernote is multi-platform,  multi-OS and primarily web based.  So,  no.
2. Select plain text,  without images or tables.  Right click that text;  choose "encrypt selected text".
3. Evernote is not yet HIPAA compliant (which is a US requirement for health care patient records).  In Europe we have GDPR.  You'd be best off getting some local advice on what is permissible.
