Updating seems to have fixed it. The default display option was already set to Single Page. Thanks! -
All of a sudden, dragging and dropping PDFs (whether onto the Evernote icon in the dock or directly into the Evernote window) only imports the PDF's title and not the PDF itself. I can then drag the PDF onto the note that was created, and it appears normally.
