I understand that adding RTF-support in the iOS version is hard/impossible and won't be there anywhere soon.
But because of that I think you to be a bit original.
For example, to make checkboxes work acceptable in plaintext; make it that [] shows as an empty checkbox in the Mac version, and that [X] shows as a checked box.
Now I doubt it will be possible to also let a checkbox appear on the iOS/mobile version, but it may be possible.
This will make EN so much more capable to also use it as task manager.
Of course this is just a suggestion how to achieve that...
