Overall Evernote does a pretty good job of making text editing work like Microsoft Word. However, there's one editing operation Evernote does different and it's a source of constant frustration for me.
Select a full line. Cut it. This removes the entire line, including the "return" or EOL at the end of the line. So far, just like MS Word. Move the cursor to the start of another line and paste. MS Word pastes the entire line including the return or EOL. However, Evernote does not include the EOL, which means the user has to add it either before or after doing the paste. Evernote should paste exactly what was cut or copied.
