I am having the same problem and I confirmed that the autofiling is checked off.
Not sure if it helps as a piece of additional info, but the notebook where all my emails are going into using the gmail evernote add-on, is one of penultimate. i have uninstalled penultimate in order not to have the 2 apps connected, but the email is still going to the non default notebook.
I confirm that my default notebook is "action pending" and the non default is 2021..
