Adding to an email received

The email is stored in the note in Evernote's enml/html format
There is nothing to stop you from editing the note contents

You may want to make a copy of the note - right click on the note, select Copy Note, and then pick a destination notebook.  That way you can test the editing and if it doesn't go the way you like you can make another copy and start over.  Per @DTLow some emails contain hidden formatting which can cause strange results.  Sometimes copy/paste to a new note works as well.  Good luck.
