In Evernote for Android it's possible to tap on the thumbnail of a scan once it's been completed for some basic editing, or to annotate / edit the content once it's been saved to a note. What you see is pretty much what you get - and Evernote won't normally comment on what may or may not be in development. (We're a -mainly- user-supported forum, so no direct knowledge here anyway.)
