As per my linked post, Evernote is aware of the bug and are working on a fix (ASAP) The app fails to access the handwriting data; your Handwriting has not "changed to an image" No other suggestion other than downgrade your software version Link to comment

Downgrading in IOS is much too complicated to explain. You can search the forums; it requires a Mac computer and iTunes Link to comment
