Do google or facebook have access to the information in our notes? Do they or any third party organization mine data for advertisement and such from keywords in our notes?

I'm confident Evernote is not mining our data and Google/Facebook don't have access

There's no third party access, unless you've authorized access (see Account Settings > Applications)

I do want to make sure but I can't find "Applications." Are you talking about going to account settings on mobile? PC? Or the website? Either way I don't see it on any of the three.

Under Account Settings on the web, drop down next to your user name in the upper right.
