Where are actual Notes stored...

The master version of your notes is stored on the Evernote servers, but Evernote stores a full copy on Mac/Window platforms

To locate the database folder on a MacUntitled.jpeg

Click on About Evernote, and press the option key

A link to the database folder will appear

The notes metadata is stored in a database file (LocalNoteStore.sqlite)
This is data such as title, notebook, tags

Its not advised to mess with the data outside of the Evernote app
I've accidently corrupted many databases over the years.
Fortunately, this is just a copy of your data; the master version is stored on the Evernote servers (except for local notebooks and unsynced notes)

You can backup this data, but the restore process is complicated

When I scan a multipage document, sometimes I want to remove a page or change order of pages. I realize now that I can right clip the note within Evernote and then edit in Acrobat Pro. Is this the correct, safe way to do this?

Yes, editing within the note in Evernote is the best approach.
- you should not edit the pdf directly, even if you know where its stored
Edit either using the built in features, or external apps
Acrobat Pro is an excellent app, although expensive.  Macs come with the Preview app.

Try a search for created:20150101 -created:20160101 for your 2015 notes, then modify for the 2016 notes.

As @csihilling said, you can use the search feature to list your notes based on a date rangeScreen Shot 2017-01-02 at 8.33.29 AM.png

You can also change the sort option for your note list so the notes are sorted by date

You might want to use a tag and shortcut to identify your journal notes
