Same thing here. This happens on both Catalina 10.15.7 and Big Sur 10.16.1, on two separate MacOS devices. If I exit Evernote and relaunch, note content will again display, but when I come back later, they do not. I'm on Evernote 10.5.7 build 458420 public.

Just tested the beta Chrome web client as #gazumped suggested, and I also confirm bullet point formatting works across clients.
