My guess is that you logged in with a different userid
Your 5 years of notes are sitting there under the old userid

Reboot Log out, then log in to Evernote; make sure you use the correct userid/password Force a full resync: Hold the **Shift** and **Option** keys on your keyboard and click the sync icon -

No such feature in the Evernote/Mac app
The features are built into the Mac OS; password required "when the computer goes to sleep, or after X hours of inactivity"
I also use the Near Lock app to lock/unlock my Mac based on proximity
I don't like the idea of someone grabbing my laptop, or having access to any of my data

No, Evernote doesn't support locking at the note level.
Depending on your platform/device, you can lock your account and use Face Id

For the 'classic' link in IOS,
Retrieve the internal link (https://www.evernote.com/shard/...) Paste the link into the note - it is converted to the classic in-app link Copy the classic link from the note by long pressing the link I moved the discussion to the IOS forum.

Restore the note from backups.
I have personal backups, and Evernote has a Note History backup
Access to the Note History backup data is a paid feature.

Evernote supports two fields for organization of note data; Notebooks and Tags (both are fields in the note metadata)
There is no support for Folders.
You seem to be comparing use of the Notebook field to the Tag field
You didn't mention the important Notebook function of identifying notes as
- private/shared
- online/local (Windows/Mac)
- offline (IOS/Android)
Also note the maximum number of tags is 100,000
The maximum for notebooks is 250; 1,000 for paid accounts.
The search feature has various options for tags; limited support for notebooks.

I use an !Actionable tag to identify actionable notes.
And the Reminder feature for these other attributes.

The Mac/Windows platforms allow for the update of the date fields.
I use a Mac with scripting and my process is
- not adjust Created Date
- store Subject Date in three places
Metadata: Subject Date Metadata: Title (prefix) Contents: I append the note contents with a copy of the metadata

Evernote has a tag feature that functions at the note level.
You would have to use a single image per note.
You can type a keyword into the note contents; for example Photograph: Freplace
A text search for "Photograph: Fireplace" will retrieve all notes with those images

I use a separate note for each task
For task management, I have two workflows
Processing tasks from my Inbox (default notebook) Processing tasks from project management I use a saved search to produce my current task list reminderOrder:* -reminderTime:day+1 -reminderDoneTime:*
As you can see, its entirely date based (reminder date).
I store due dates in the reminder feature. If there's no formal due date, I assign current date to identify tasks I'm working on currently

As I'm processing the notes, I flag actionable notes with tag:!Actionable
I assign tag:!Project - aaaaaa if part of a project
I assign a due date (reminder feature) if appropriate
Processing tasks from project management
Each project has a master project note, flagged with tag:!Type-Project
Each project has a separate tag (!Project - aaaa). I do periodic reviews using the project tag.
I use a saved seach to produce my active project list tag:!Type-Project -Tag:!Archive
I add tasks as separate notes, assigning due dates (reminder feature) if appropriate.
From GTD standards, I don't worry about prioritization of tasks. Just identify the next action.
I adjust due dates if required. If there's no formal due date, I assign current date to identify tasks I'm working on currently
I review my project notes in title sequence.
To control the sequence, I prefix the note titles
-Project Note
++Task (next action)
+Task
.Completed Task
Miscellaneous notes (no prefix)
Calendar
When appropriate, I sync task entries to my calendar.
I use a script on my Mac; there are third party products like Cronofy Calendar Connector
Daily Journal
My daily journal (Evernote Note) has sections for Current Tasks and Projects. I populate these using the copy-links feature.

Two points about the storage and access of Applescripts.
I show a menu of scripts in my top menu bar.
I store the Evernote scripts in folder /Users/<user>/Library/Scripts/Applications/Evernote I turned on the menu in Script Editor > Preferences.

I use an iPad Pro, and Apple Pencil. I've been storing hand written notes in Evernote for a long time

Use your finger or stylus to add sketches directly in Evernote. Insert diagrams and handwritten notes right alongside your photos, audio recordings, and file attachments. Evernote recognizes handwritten text inside your notes so you can search for it later.
I also use Myscript Stylus, an alternate keyboard. It transcribes my handwriting as I'm writing.
