I want to be able to get to my files if the internet goes down

    https://help.evernote.com/hc/en-us/articles/209005917-Access-notes-offline

    >Is there a way to export all my files at once to back up? Or do I need to export one notebook at a time?

”all files” export was an option for Evernote Legacy; notebook assignment was not preserved
With Evernote v10, “all files” is not an option; each notebook has to be exported individually

Anybody else miss this organisational method? (nested folders)

Evernote has never had support for folders
For organization users are provided two fields: Notebooks and Tags
Some users mistakenly consider notebooks to be folders

My organization method is tags; minimal notebooks
I reflect hierarchy with my name standard
    For example; Budget, Budget-Housing, Budget-HousingRent, Budget-HousingUtilities

    > How hard …

I don’t think it’s difficult to implement hierarchy (nesting)
Evernote already did this with the Tags field
It requires updates to the database structure, and user interface

What are the Evernote files called on my Mac and where can I find them? I'm running Ventura 13.3.

What are you planning to do with the files?
Evernote is a cloud service, with data stored on the Evernote servers
There is an offline option with data stored locally, however it’s not in a useable format

What functionality is in legacy that isn't in production

Integrated scripting via Applescript (Mac) was dropped in the v10 product
I’m not “up in arms” but this forced my transfer to another product

    >Tasks are a huge part of my workflow

Likewise, project/task management is important to me
My workflow was implemented in Evernote Legacy, long before the v10 product
I made use of tags for status; reminders for due-date; and scripts (Applescript)

Filing into the ether… (Wrong Notebook/Tag)

    It happens - I’ve mis-filed documents
To recover, I fall back to the text search feature.
Creation date could also be useful
Also I have a consistent naming/keyword standard for documents

fwiw I’m not seeing it as a notebook vs tag issue

    .

  6. Local Notebooks; notes are only stored offline on the device - there is no sync to the cloud or other devices
Local Notebooks are only supported by the Evernote Legacy product
This feature was dropped with the v10 product

    >if I leave Evernote … sever my ties to Evernote?

You will not be able to access your Evernote data
You need to export your data

An alternative is to convert your account to the basic free tier

And yet Evernote has managed to ***** up the Mac version too.

My issue was the loss of integrated scripting (Applescript) with the v10 product
I also liked the Legacy local data structure; a folder for each note
and the Legacy local database could be accessed with an SQL browser

Other users found it pretty bad over time to have things spread over different apps.

Agreed; I keep all my data in a a single location (notes/documents/files)
Evernote Legacy worked well; I'm now using Devonthink (Apple)

For enhanced views of my data, I use spreadsheets (Apple Numbers)
Examples; budget/expense reports, task list in a gantt calendar view

I use scripts (Applescript) for automated workflows

Stop thinking in terms of a year; instead focus on shorter time frames.”

For planning, my time frame is today
I use a daily planner note to time-block my day
The note is created each morning from a template
and I insert entries from my calendars and task list

My task list is sorted by due-date / priority / duration

    Look to this day:
For it is life, the very life of life.
    ...
For yesterday is but a dream
    And tomorrow is only a vision;
    And today well-lived, makes
    Yesterday a dream of happiness
And every tomorrow a vision of hope.      Kalidasa
