AND...now it's back suddenly after plugging my power cord back in.

I was having the issue for a week, never updated to 7.11 and the issue just suddenly stopped after I posted my post above that said "FYI, I've established the issue only happens for me when I plug my adapter back into the computer after having it removed for a while." Kinda strange that the issue just magically fixed itself/stopped after I posted that and it hasn't happened since....and I'm still on 7.10.
