Using an LG ThinQ V35 with Android 8.0.0 I can't replicate this off of a fresh note at the moment, but this keeps happening when I go into notes I've made before. With bullet or checkbox lists, whenever I press the enter arrow key to create a new line, the font with increase in size. Been having this problem only on this new phone, probably for the past 2-3 months.
